Matt saw my plants (this was about a month ago) and pointed out that there are too much plants in one pot. I over planted them thinking they won’t grow. I agreed, and decided to make use of all the trimming by making pesto out of all of it. This was a mix of basil (mostly), cilantro, and green onion.
I don’t have pine nuts, or any nuts for that matter. I just added some garlic, olive oil and salt to the herbs and processed it until smooth. I cooked some noodles, added the pesto while the noodles were hot, and ta-dah, instant pesto! 🙂 But on top of that, I also roasted some vegetables and chicken 🙂
