I had half a can of black beans in my fridge and I wanted to use it. I always am looking for ways to use things in my fridge that needed to get used. Call it my recipe inspiration.
I already had other food ideas on my plate so I only needed a side to make. So I googled black bean recipes for sides, and this came up! I basically followed the recipe after reading it, or followed what was left in my head.
First, I drained the beans and rinsed them. Since I want my salad to be dry, I dried them on a pan, also adding some of my frozen corn to cook with it. I chopped some jalapenos and onions and threw them in the hot pan, with the heat turned off already (I just don’t like too raw onions, heat on them makes it less strong). Toss and cool a little bit before adding the dressing.
Refrigerate and serve.
Black Bean Salad Recipe
3/4 cup cooked black beans, rinsed and dried
3/4 cups shredded corn (cook if frozen)
1 jalapeno, seeded and diced
1/2 onion, minced, or 3 sprigs of green onion
about 1/8 cup of chopped cilantro
juice of 1 lime
sugar, about 1 to 2 teaspoons
salt as needed
Mix the first 5 ingredients together. In a separate bowl, mix the last 3 ingredients, then toss with the salad. Refrigerate to allow the flavors to marry. Serve cold.
