Okay, the title isn’t exciting at all. But this is the first time I bought and used parsnips. I told Matt I want to be able to buy and try something new every week that I have never tried cooking or eating yet (finishing a whole heavy cabbage in a week was also an achievement!). So we got parsnips. Okay, just one.
I googled a little on it and though it cannot be eaten raw, like carrots, they are very similar in flavor and profile. So when I needed carrots for my pancit, and I didn’t have any, I decided to use some parsnips. I couldn’t even tell the difference, except for the lacking orange color in my pancit!
The next time I used it, I roasted it with carrots. I seasoned it with salt and a bit of sugar, then added some oil. It was good too, but it wasn’t smashing. Maybe I needed a dish catered to the parsnips more than just being an add on.
