So I have switched from preparing my own packed lunches to preparing my now-husband’s packed lunches. (Yaaaay. We got married last Feb.28! Sorry for the delay in news – due to pre-scheduled posts!) And I do enjoy it as much, maybe even more, especially since it will always be a surprise for him.
Matt likes peppers, and I am just okay with it. He always grabs a bag of it when we go grocery shopping, while it is something that I just keep at the back of my mind when I cook and shop. But I have to give the guy what he likes. And this is one lunch I actually got jealous of, because I only made enough for one serving.
I have never made this before but I scanned a few recipes and knew how I wanted it to taste. Basic ingredients were meat, tomatoes, beans and rice. And you adjust the seasoning as needed. It looks pretty, and the filling was tasty! Maybe on another day, I can make a batch of this again!
Roasted Stuffed Peppers Recipe
1 big mild pepper, halved and deseeded, or 2 halves of 2 different kinds (I put the other half in the stuffing)
1 pepper of your choice, minced
half an onion, minced
several cloves of garlic, minced
cooked ground meat or sausage, about 1/3 cup
2 to 3 heaping tablespoons of cooked beans
1/2 cup of cooked rice
grated cheese, to taste
salt (I used chipotle salt!)
a mix of paprika, garlic powder, chili flakes, cumin to taste
Oil the pepper halves lightly. Start roasting the sliced halves of the peppers in the oven while the stuffing is being prepared.
In a small pan, saute the pepper, onion, and garlic until they are translucent and cooked. Add the meat, beans and rice. Allow the flavors to come together, a few minutes. Taste, and then season with the aforementioned seasonings (taste first because the beans and meat may have enough salt on it already). Once okay, pull out the peppers from the oven and stuff with cooked mixture. Top with cheese, and roast for 10 more minutes. Cool and pack for lunch!
