One of the easiest rice cakes to make. Not really made from rice though, root crop. But its classified with rice cakes anyway.

The wet mixture

This is made from the cassava root, grated, squeezed the liquid away, then mixed with water, sugar, some lye water, and then steamed for 45 minutes. Then this is coated in grated coconut, or the newer one, with cheese. It is very simply made, but very tasty really. My mom just requested this, and with my imminent departure from the Philippines, I am working doubly hard to ensure my mom gets what she likes. 🙂

Pitchi Pitchi Recipe

2 cups grated cassava, water squeezed out
2 cups water
1 cup sugar
a teaspoon of lye water
fresh grated coconut for coating

Mix the first 4 ingredients and steam. This will be the denser kind. Slice and coat in coconut once cooled.
