It is almost Christmas! I cannot wait!
So I was (er, am) trying to be healthy and decided to cook up some soup. I realized I don’t like hearty soups too much so this might not make a repeat or show anytime soon. I will find other ways to use my barley, maybe in a congee instead or something.
So basically, I just dumped crushed tomatoes, barley, salt, sugar and pepper in a pot and let this simmer. I finished cooking the barley first before adjusting the seasoning more. The barley thickened the soup quite considerably that it became too heavy for me. Call it a winter soup if you will.
Basically, it is nothing fancy really. But mom did like it! But maybe a little lighter next time. 🙂
