Seafood Paella

Documented this one because we were all giddy from getting engaged and we were hungry (and sweaty from cooking) at 10pm ready for dinner.

I did have the mussels prepared beforehand, even the tomatoes I cooked over the weekend before Matt got here. Lechon was also a leftover from a previous meal. But the shrimp and the rice and the peppers were raw. I first cooked the lechon in the cast iron pan, and that rendered fat. I added peppers, but removed them too after lightly cooking. Then I added shrimp and cooked this. Added the rice, and toasted them for about 5 minutes. I then added the tomatoes and broth, topped this with mussels, and allowed this to cook for about 20 minutes. I added the peppers and green peas in the last 5 minutes of cooking jus to heat them up.

And my goodness it was really good! I am glad that was Matt’s first paella because it is soooo good. Even I say so myself. ūüôā
