I made an oregano garlic chicken meatballs a couple of weeks ago and I wanted something similar but quite different. I learned from Matt before that sage goes well with chicken, so I googled a recipe using sage for chicken sausages. I found one that had more fruit and vegetables in it too! An apple sage chicken sausage. I read through the recipe once and did it from what I remember. I knew afterwards that I forgot celery seeds that I was so keen on using actually. But that’s fine. The other important things I remember doing.
First, I set aside a pound of ground chicken. I cooked a whole minced onion, along with 2 minced gala apples. I seasoned this with salt and about a teaspoon of sugar while it cooked down. Once softened, I added this to the ground chicken, to which I already grated a whole carrot. I seasoned this with salt, sugar, and about a tablespoon of chopped fresh sage. I made two dozen small sausages with this one, after cooking a bit and tasting it. I will treat this the same way I did the other one, like an all around ingredient for any vegetable and meat mix.
This doesn’t look as pretty as I wanted it to be. But it tastes just about as good as I expected it to be.
