Meatballs!

I made a generic meatball sausage to be used anytime I need something quick and fast. I was also making it a more vegetable laden meatball. Something that won’t feel like fake meat. But just meat with a splash of vegetables in it.

Meatballs with fresh tomatoes and rice

I mixed 300 grams of ground chicken with a whole grated carrot and minced garlic. I also added oregano, a generous sprinkling of salt, pepper, and one tablespoon of olive oil. I mixed this together and it came up to about 40 small meatballs. The size of a peso, or a dollar coin. Based on my computation, I will be getting 8 meatballs per serving. I froze them, then seared them covered in a cast iron pan. Then all of them cooked, I just kept in the fridge.

On some days, I mixed it in pasta. On other days, I added it to a stew like dish. This is the simplest way I had it. With a huge helping of tomatoes with fish sauce, on rice. It was pretty good to say the least! 🙂

PS. This is also the “sausage” I used for my gumbo 🙂

Easy Meatball Recipe

300 grams of ground chicken
about 1/2 cup of grated carrot
1/2 teaspoon of oregano
3 tablespoons of minced garlic
1 teaspoon of salt
1 tablespoon of olive oill
pepper, to taste

Mix all ingredients together and make into small balls. chill or freeze before searing or cooking in an air fryer (not oil, I am avoiding that). Use as preferred.
