So sometimes you have leftovers you want to eat a different way you originally made it. Well this actually happens to me a lot of times. I am so used to hunting down items that needed to be used that are in the fridge and making some magic to make them appeal to you like leftovers don’t. And my ingredient: Spicy garlic mussels. And what am I making: pastaaaaa!
I do love pasta. I love them in oil, or in thick creamy tomato. I like them tossed with vegetables and fresh ingredients. I just like how flexible it is generally. So this was an easy thing to manipulate. Cook some noodles (I used bucatini) and set aside. In the same pan, pot, or whatever you used, heat the mussels and all of the sauce. Toss in the pasta. Add in a creamy base (I used leftover homemade yogurt ceasar salad dressing). Adjust seasoning accordingly. Simple right? And it was lovely. And healthy too, I think! 🙂
