Cilantro Lime Chicken

I was thinking of what to make for my packed lunch the next day. I was grabbing some leeks, because I do love those, when I realized I bought some cilantro that needed to be used! I googled recipes and found this easy one I thought would taste delicious. Of course, I made it way differently than was instructed originally in the recipe (like everything I make), but it still tasted great!

This is supposed to be a marinade of sorts, but I just cooked the chicken in the pan with the sauce, to make it more flavorful too. I think this will also work well in a wrap, on its own, or layered with the rice, or even with a bit of salsa.

Cilantro Lime Chicken Recipe

5 cloves garlic, pounded and chopped
1 to 2 tablespoons of honey, to taste
salt, to taste
juice of 1 lemon, or 5 calamansi
1/3 cup chopped cilantro
1 to 2 tablespoons of olive oil
100 grams diced chicken
broth, about ½ cup or less (my chicken was frozen, needed longer to cook)

Mix first 5 ingredients together. There should be balance of sweet, sour and salty. Taste and adjust seasoning if necessary. Set aside. In a pan, put in the olive oil, and add the chicken, quickly follow with the sauce mixture and the broth and allow everything to cook through. The sauce will almost disappear, concentrating the flavors as well. Serve with Mexican beans and rice, recipe up next!
