So how did I end up making a salad dressing out of calamansi juice? Honestly, it wasn’t my first choice because I have never done it. More like my third. I was going to make a caesar salad dressing but then we didn’t have mayo or yogurt! So no, I am not going to make my own mayo for this. The next thing was to make the dressing of the typical roka salata or greek salad, which was made out of balsamic, oil, and honey. I started pouring my balsamic vinegar and it had black flakes in it. I don’t know what it was, but apparently the vinegar kind of “settled” up. And now, it wasn’t a mother. It was…gunk.

So finally, I decided on calamansi. I had my lettuce ready, as well as my candied nuts, and sliced apples. So I just decided to mix in my blender some walnut oil, calamansi juice, and honey. The strong flavors of the walnut oil was present. Very present. But I am beginning to appreciate its woody taste. And I think it worked well with the candied nuts and apple. Really well actually. And so, I have discovered my own dressing. Calamansigrette. 🙂

Calamansigrette Recipe

10 calamansi or 1 lemon, juiced
1/4 cup honey
1/4 cup salad oil (I used walnut oil)

Put in a blender and blend. Adjust seasoning to your liking. Serve on your salad.
