After my wonderful successful experiment on Spicy Pork Cubes, I decided to go the healthy route and make this with chicken breast and lentil sprouts. I basically did what I did before with the pork. But I added a bit of olive oil, because the chicken is too lean that it won’t release fat the same way (and make a juicy sauce).
I then cooked this through before adding the lentil sprouts and chili garlic. It was done by then, I just made sure that the sauce dried up a bit to let the oil shine through. Then eat with rice.
Spicy Chicken Cubes and Lentil Sprouts Recipe
1 half chicken breast, about 3 ounces or 100 grams, cubed
2 tablespoons of olive oil
4 heaping tablespoons of tomato sauce
1 cup lentil sprouts
2 heaping teaspoons of chili garlic
salt to taste
Quickly stir fry the cubed chicken breast in a hot pan with the bit of olive oil. Then add the tomato sauce and let this cook through. The tomato sauce should dry up almost, leaving the oil in and chicken in the pan. Add the lentil sprouts and chili garlic (adjust to taste) and season with salt as needed. Salt will be dependent on how salty the chili garlic is. Best serve with rice, or on top of noodles.
