Ever since I discovered the wonderful flavors of mushroom (my favorite is eating it fresh with my salad), I have always loved loved loved splurging on them. They are quite expensive, but it is really good no matter how I cook it. So the buy is always worth it.
I had some slices of beef tenderloin (yay, lean meat!) and wanted to make a great stir fry off some sort in it. So I decided to add my 4 kinds of mushroom in it, white button, baby shitake, enoki, and oyster mushrooms. I cut all of these into tiny pieces and set them aside. I then moved on to the beef.
I placed the marinated beef in a hot pan with a bit of oil. I let this sear mostly, then added the mushrooms. I let this cook down until the mushrooms were wilted down. With the sheer volume of the mushroom, this took a while. I had maybe 3 to 4 cups of the mushroom. After that cooked down, adjust seasoning and serve. Really good.
Beef and Four Mushroom Recipe
300 grams of sliced beef tenderloin
2 tablespoons of soy sauce
1 1/2 cup oyster mushroom
1/3 cup each shitake, and button mushroom
1 cup enoki mushroom, sliced
(or you can use any combination of mushrooms you like)
Marinate the beef in the soy sauce before starting to work on the mushrooms, cleaning them and slicing them. This will only be quick. But only do the marination about 10 minutes before actual cooking and not any longer. It will be too salty.
Once you have prepared the mushroom, start heating up the pan. Sear the beef pieces in the pan until cooked. Add in the mushroom. Cook this down until the juices come out of the mushroom and it kind of dries out. Then serve 🙂
