I am out for more healthy dishes and this was an easy one I have never tried before. It was more of a light tuna salad that I will wrapping in tortilla. Matt helped me with the idea and I kind of just built it from there.
I just mixed 1/2 cup of tuna, chopped cilantro, chopped celery, and chopped seeded peeled tomatoes. All of those 1/2 cup worth. I added sugar, calamansi and salt to adjust seasoning. And to bind it all, about two tablespoons worth of cheese! Then that was it. I kept it in the fridge and left it like that until I was about to eat it, when I wrapped it. I didn’t want the tortilla to get soggy.
It produced a lot by the way. A lot. I wasn’t hungry for anything after. It was surprisingly light and refreshing. Though I think tacos and wraps are light, the flavors and all the greens in there made it even a brighter flavor. Yum. Easy to pack meal. Or something like a picnic, this would go great too. 🙂
Tuna Salad Wraps Recipe
1/2 cup tuna
1/2 cup minced onion
1/2 cup chopped cilantr
1/2 cup celery
1/2 cup diced peeled and seeded tomatoes
Mix all of the ingredients together and chill. Serve with tortilla or lettuce cups.
