I was talking with my boss and telling her I have free cilantro from work samples and I love that herb. And she said she like that too and even likes the pasta from a local restaurant that uses that. I love cilantro in Thai and Mexican cooking so I was surprised to find out a different dish that uses cilantro!
I researched and found some light cilantro based pasta. Most were similar and I just decided to go with the same route, except to replace cream with milk and a little cheese. Some had just the cream, like a cilantro alfredo sauce. I went with the versions with chicken on it. I do need my protein fix for lunch. So basically my ingredients are diced chicken breast, garlic, calamansi, cilantro, chili, pasta, milk and cheese.
Chicken and Cilantro Calamansi Pasta Recipe
100 grams noodles, cooked
1 chicken breast, diced
5 garlic cloves, minced
juice of 4 calamansi or 1 lemon
1/2 cup chopped cilantro
1/4 cup pasta
1/4 cup milk
cheese, as much as preferred
chili to taste
salt and pepper, to taste
In a hot pan, sear the chicken in the olive oil until almost cooked. Season with the calamansi juice and salt and allow the juice to dry up. Add the garlic (add more olive oil if necessary) and the cilantro soon after. Cook the garlic through, and allow the cilantro cook a bit. Toss in the pasta, milk and cheese and mix quickly. Taste and adjust seasoning. Remove from fire even while adjusting the salt and pepper, chili flavors. Toss again, serve. 🙂
