Beans and Rice

Matt has influenced me again on this dish, which he has been doing for the past few weeks. 🙂 I mean, now that we are back to long distance, food has come back to being a star in our conversations. He had this as a side from Popeye’s. Well, everyone knows we have rice regularly in our household. And I do like beans, and I knew I have the making of this dish even before I started on it.

I googled recipes online and used the first one that I found, this recipe. And the way I usually am, I didn’t follow the recipe. I knew that making this in the batch may mean unconsumed food (the rest of the house doesn’t like to eat, and it too much for me to consume in a week (I like variety in my food). So I first stuck to making the beans, using pinto beans instead too since this is all I have. I cooked it like the recipe instructed (without some of the herbs and spices), and minus the sausage.

I had quick cooking beans so this only took about 30 to 40 minutes to finish. I then set this aside to cook with the next day.

The next day, I had one whole sausage, sliced into thin rounds, which I then fried. I added 1/2 cup of beans and some of the sauce and let it heat through, I then added the rice and mixed it all, let it heat and fry a bit in the sauce and oil mixture. And it was done.

It was sooooo good. Like healthy (maybe more if I trade in the pork/beef sausage with turkey or chicken sausage,or ham or even just plain meat. But that will have to wait for another time 🙂
