Fajita Salad on Tortilla Crisps

Something that I really like in Mexican food is the salsa. Fresh tomatoes, onions, cilantro, with lime, sugar and heat. When i discovered how to make it, I always do. Of course, it is some kind of production altogether though, with me messing up the kitchen. But I have always liked my fresh ones than those canned or bottled ones.

I decided to make a chicken fajita salad. The preparation is a bit of a mess, but I will try to drill ti down as best as I could. But the new discovery here is the Tortilla Crisps. It is an unfamiliar item of Village Gourmet, a local brand of, well, gourmet bread. So the tortilla is sprinkled with cheese and herbs then baked to a crisp and packaged as chips. Good as nachos, I think. 🙂

Fajita Salad on Tortilla Crisps Recipe

Fresh Salsa Recipe

10 tomatoes, blanched, peeled, seeded and diced
1 onion, minced, then heated on a dry pan
1 bunch of cilantro, to taste
1/2 lemon juice
1 to 2 teaspoons sugar, to taste
2 tablespoons of tomato ketchup
chili flakes, optional

Mix all ingredients together. Set aside.

Grilled Chicken Recipe

3 chicken breast fillets, diced
classic rub (store bought) as needed

Marinate the chicken in the rub for at least 30 minutes. In a hot pan, pan grill all of the chicken until well done. Set aside.

Other Preparations and Ingredients

Lettuce, shredded
1 avocado, diced
sour cream
cheese (I used cottage cheese)
tortilla crisps or nachos or tacos

On a plate, layer the ingredients. Lettuce, followed by the chicken, salsa, avocado, sour cream, then cheese. 🙂 Serve with crisps. Eat!!! 🙂
