I cheated, I cheated. I know that from the very beginning. This isn’t the classic cacio e pepe. One, it isn’t pasta, it is rice. Two, I didn’t use the “right kind” of cheese, which is Pecorino Romano. But you know me! I never follow recipes! The only things that I kept loyal to the recipe was olive oil and pepper, which basically goes into all of my dishes anyway.
So maybe what I should have said was Cacio e Pepe inspired chicken vegetable rice… But then, that doesn’t sound as fun. I saw a recipe of something like this somewhere on the web. I scanned it, then just made my own. Remember my vegetable rice? Well, the base is almost like that. Plus the rice, and cheese, and lots of pepper.
I had some celery, leeks, and carrots all minced. I also had some dry split peas pre-cooked before I started working in the kitchen. The rest was a breeze. This is basically like making fried rice or some pasta, which is a lot of the time, I play it by ear (or whatever we have in the fridge or pantry). I added tons of veggies, you know, healthying things up. And I ended up with about more than a cup of the whole thing.
A lot it seems, very filling for sure. Another healthy rice dish am targeting next? Omurice!
Cacio E Pepe Chicken Vegetable Rice Recipe
1/4 cup minced carrots
1/4 cups leeks and celery, any ratio or ommision would do
half a chicken breast, diced
1/2 cup brown rice
1/2 cup cooked split peas
about 1 oz of grated cheese
lots of pepper
Heat the pan and add in some olive oil. Once hot, add in all of the raw vegetables (and whatever else you want to add in it). Let all of these soften a bit (or cook through, if you like your vegetables like that). Season with a bit of salt. Note that there will be cheese at the end so don”t over season.
Add in the diced chicken and season sparingly as well. Ensure all of the chicken is cooked through before adding the rice and cooked vegetables.You may opt to add a bit of water after adding the chicken to make sure the chicken cooks properly. Mix everything in, then add the grated cheese, and with a bit of pepper. Taste. Adjust seasoning of salt as needed. The dish should also be peppery and a bit spicy (mmy preference), and please use freshly ground pepper if possible 🙂
