Peas. Love hate affair. I love peas, those that come in dry form, or even the dry peas in canned version. I have never tasted real fresh peas so I cannot figure that one out. But I really dislike the mushy texture of those that come frozen in packs. Those that come in the mixed vegetable? Nope. I really don’t like them. Maybe pureed in a soup, yeah. But on its own? They’re like green dead vegetable orbs.
So now, I always buy dry peas. Because they are so versatile in making stews or soups or just adding more veggies to my food. They’r healthy. And they are easy to use.
I decided to make a high protein meal out of this recently. After realizing I like peas more than lentils, I will be making use of this more. I sauteed some chicken breast fillet alonside onion, tomatoes, and garlic. Then I added the chicken, along with chicken powder seasoning. I then added the peas, and some water. And let this all cook down. I was looking for a dry base. Nothing soupy. Just enough to cook the peas completely (I like it a little al dente). It was finished after a few minutes. And it tasted fantastic! Simple to make, takes no time at all, few ingredients, and great for the health 🙂
Chicken in Peas Recipe (Serves 2, about 350 calories)
1 onion, sliced
4 garlic cloves, smashed and peeled
2 tomatoes, diced
I whole chicken breast fillet, cut into 4 (about 3 to 4 ounces per serving)
1/2 cup dry split peas
chicken stock or equivalent
Saute the onion, garlic and tomatoes. Once softened,add the chicken, and season with salt and pepper. Let it cook a bit, but no need to cook it through. Add in the peas, then water or broth. Then let this cook thoroughly and completely. Let the liquid dry up too, just enough keep everything moist. Done! 🙂 Takes about 20 minutes.
