I LIE! I did’t have bacon when I made this. And I obviously don’t have pancetta as a regular in my pantry. (I will try making some guanciale soon though,before the heat sets in.) I was actually halfway into making this when I realized that I didn’t have major ingredient!!! So I got creative.
I got this recipe watching (still) the The Two Greedy Italians (I just finished though, so different inspirations soon). It looked so easy, reminiscent of the Iberian chicken that I like as well. The only difference was the wine (which I regularly replace with just stock in local cooking because of bad experiences and now a breastfeeding sister, and little 3 year old Maven eating the same food). But I got into it soon after I watched it. I had chicken, cut into pieces and seasoned with salt and pepper. Then this was coated in flour. In a pan with olive oil, the chicken was lightly fried, then all of the seasonings were soon added. Garlic, rosemary, peppercorns, and a bit of chili peppers. Cover in wine (I covered mine in broth). This is the part where it is supposed to be topped with pancetta, or bacon. Which I didn’t have! So I took some boiled pork cheeks (same ones we use for making sisig.), sliced it into bacon like strips, and laid this on top of the chicken. It would have been better if this was pan fried first, for more flavor. But the show didn’t do that.
It was only after everything has been cooked down that I realized I missed out the flavor of the salt in the pancetta. The dish was under seasoned! I asked ate Pines (our helper) to add in salt to it the next time she reheats it. And it did taste way better. 🙂 I know it would taste way better if with pancetta, even with just bacon. But it is simply a good dish worth trying, and maybe doing again next time to perfect it.

Rosemary Chicken with Bacon (or Pork) Recipe
1 whole chicken, about 1kilo, cut into serving pieces
a few tablespoons of olive oil
a tablespoon of rosemary
5 garlic cloves, smashed
about a cup of broth
bacon, pancetta, pork
Season chicken with salt and pepper, and then coat in flour. Lightly fry in the heated olive oil in a pot for stewing. Then add in the rosemary, garlic, peppercorns and chili. Pour in broth. Then top with the pork.Allow this to cook on a simmer to a mid boil for a good 30 minutes. Taste and adjust seasoning as needed. 🙂
