I tried this in Mamou and I was trying to copy what they did but my version turned up some mushy (overcooked, I am guessing) zucchini that had soft centers. I want the harder heartier chewable way of cooking vegetables. And this kind of failed on that point.
But this was a quick saute of tomatoes, seasoned as needed, and then topped with thick slices of zucchini. It was light and refreshing, good after feeling heavy and gross with all the holiday eating that we did. But I wrongly paired this with the tabouli and I barely lasted throughout the meal. But this was seriously good. Simple and light 🙂
