We have some shrimp intended for New Year’s Day (which was too much food I think so we ended up cancelling on that :P) and I asked mom to set aside some for me to experiment with.
I have seen this baked prawn recipe from one of the local restaurants. I have never tried it before and recipes for it seemed to be nonexistent (maybe it was outshone by the baked salmon). So because of that, I assumed that the salmon and the shrimp have the same ingredients and flavors 😛
Baked Prawns/Shrimp Recipe
1/2 cup cream cheese
1/4 cup grated cheese (I used queso de bola)
1/4 cup mayo
garlic (I omitted this)
Prepare the shrimp by deveining, removing the sharp parts as well, then slice from the back. Dry and keep cool in the fridge while prepping the cheese mixture.
Soften the cream cheese then mix in with the cheese. Add the mayo and chill.
Place about half a teaspoon (for the small ones) to about a whole teaspoon or more (for the big ones) and cover the entire exposed body of the shrimp. Chill once done.
Bake in the oven for a good 30 minutes at about 350. Check doneness. I am a bit apprehensive of undercooked shellfish after my allergic reaction last Christmas. So adjust cooking time to your liking.
It was really good, I promise. 🙂 Would be nice to do it again on bigger shrimp.
