Fried Zucchini

NOT THE HEALTHIEST WAY TO EAT VEGETABLES. I know I know. But after using some in the pork ratatouille, I was thinking of another way to use it. I coated this with egg then breadcrumbs, or in this case, crushed cornflakes, then fried it into chips. It was crunchy and kinda good, but I can feel the oil in the veggie, so it’s not as good. How else do you use your zucchini? I need bright ideas. šŸ™‚

Fried Zucchini Recipe

! zucchini, sliced into rounds
1 egg, beaten
breadcrumbs or crushed plain cereal
salt and pepper

Coat the zucchini with egg, followed by the breadcrumbs. Fry in oil until crispy/tender (they came out both, crunchy cereal but soft vegetable), then season with salt and pepper out of the fryer. Serve šŸ™‚
