Pork Noodle Soup

I usually work with chicken when making soup that I forgot how lovely pork broth is. I bought some more fresh noodles on a recent trip to the supermarket  because I really noodles. And I believe (could be mistakenly) that the fresh noodles are healthier or at least better than the instant noodles that I have. Of course making my own noodles will ensure better health benefits maybe. But would taste it taste as good? Maybe not!

So I boiled some pork with pork broth cubes, garlic and spring onion. Simple. I let this get tender, and added tons of vegetables such as jicama, carrots and cabbage. I boiled the noodles separately and set it aside. I then served the noodles,and the hot soup on the table, for people to get as they please.

This was maybe one of the simplest things I have made with regards to preparation and flavor. But good soup is always filling and hearty. 🙂
