Of course, this does not represent all the suman in Kalibo. To think that we bought these near the airport for pasalubong or gifts. And we only bought one kind of the three she was selling, because our sweet tooth made us buy these.
This is called suman sa latik. Suman generally encompasses a lot of variety of rice cakes, mixed with coconut milk, sometimes with sugar, sometimes without. It can also be made using cassava, in some areas. The suman is a Philippine delicacy with each region having it’s own flavor or specialty. The one we ended up liking is called suman sa latik. Latik, generally, is a cooked, sweetened coconut milk that is mixed as an additional flavoring to a lot of rice cakes. It can be gooey, or a little drier. It all depends. This version included the coconut meat in the mix, and topped generously on the suman.
The serving is quite small honestly. But the sweet sugary taste won us over. 🙂
