I spied this on the internet and thought that the recipe was simple enough to follow. Except I didn’t have the required dried morel mushroom, nor did I have champagne or planning to put any alcohol in any of our dishes due to a couple of reasons. But the concept was interesting enough. And, I was thinking of a dish that will go well with pasta (what I wanted) and rice (for those who think they never feel full from pasta,and little Maven). The troubles of a modern cook.
Easy enough though adjust the recipe. I used button mushroom, and maintained the liquid as stock. Cook cook cook. Adjust the seasoning which was mostly salt, or chicken powder. It was too savory for me at the end, and tossing the pasta with the sauce, plus a bit of lime, it was delicious though. Really simple, but really good too.
Chicken with Mushroom Recipe
2 tablespoons of butter
2 tablespoons of oilive oil
1 onion, diced
1 whole chicken, cut into serving pieces
3 cups in all, chicken broth
1 can button mushroom
chili flakes, if preferred
Saute the onion in the butter and olive oil. Add the chicken pieces and saute until browned a bit. Add the mushrooms, some stock (I kept adding a bit just to make sure there is enough sauce, but not soupy). Add more if needed until the chicken is cooked through and adjust seasoning as well. Once cooked, Place some pasta on the plate, drizzle with the chicken sauce, place a chicken piece, and squeeze some of the lemon over it. Really yummy. 🙂
