I have always liked this dish because of the sweet veggies with it. It’s the fried pork, or chicken or any kind of protein tossed with some reds and greens and whites. I never really attempted this before, and attempting it without a recipe initially sounded daunting. I just made it anyway. Let’s go over the edge a bit 😛 Fun to do so, even culinarily 🙂
I actually made this chicken and pork style, because kuya Dino doesn’t eat pork. I sliced some pork belly, and sliced a chicken breast as well. Both were marinated in a mix of vinegar, sugar, salt, pepper, with additional heat for the chicken. Just enough to season the meat. This was marinated for a couple of hours, squeezed the marinade out, and coated with flour. Deep fried after and added a dash of salt to it as well from the fryer.
In the meantime, I cut into small dice the following ingredients: 2 bell peppers, 5 finger peppers, 1 onion, 1 whole bunch of spring onion both the white and green parts. This was then set aside.
First I sauteed the onion, along with the white part of the spring onion, with a bit of rendered fat from the pork pieces (some were really fatty and I just remove them and used for this). I then put this on one side of the pan, and added the bell peppers, and allowed to cook again. I combined this with the onions and put in one side of the pan and repeated this with the finger peppers, and afterwards, the spring onion green part. Everything was seasoned with salt per batch. After all the veggies have been wilted, I tried it and DIED. My mouth was killing me from the heat. I did remove most of the seeds from the finger peppers, but I ended up shoving into my mouth water, sugar, rice and ended with a banana. I teared up from the heat. 🙂 hahaha. Funny. I added sugar to the veggies, almost gave up on it, until I tried it again. And this time, it was really good. Like crazy good!
Usually, this is to be tossed with the pork upon service. But with the scare of the initial tasting, I decided to serve this separately as a side, for those who wanted the veggies. And everybody loved the veggies 🙂
It was a kind of a surprise, and a happy one at that. I hope I’ll still be able to replicate this, having went with my gut instincts. But I guess I can get there again, can I? 🙂
For the protein: cut into small bite size pieces. Marinate in the following for a couple of hours:
Chili flakes (optional)
For the veggies, prepare the following into small dice:
2 bell peppers
5 finger peppers/banana peppers, siling haba, whatever you call it
spring onion, separate the white and green part
Remove the excess marinade from the meat and coat in cornstarch. Fry (deep, pan, air fry, your choice) until cooked through. Set aside.
Saute the veggies by batch, seasoning each batch with salt. Add sugar to sweeten the whole mix and to kill of the heat. Toss together the meat and the veggies. Serve 🙂
