Schezuan Chicken

So I forgot to post this before I left. Too bad since it could have lessened the week long break I appeared to take!

My mom loves Chinese food, even those that I found too saucy or wet, like this one. But I have been foraging on lots of Chinese food recently so I decided I can easily make a go here.

Just mostly stir-frying, then the addition of the sauce, and there you have it! It is easy, and light on the tummy. Usually, this has more veggies than meat, but you know how we love our meats 🙂

Schezuan Chicken Recipe

1 1/2 chicken breasts, diced
1 bell pepper, sliced into inch strips
1 onion, sliced
1/2 carrot, sliced
onion leeks, cut into 1 inch pieces
garlic, smashed

In a hot pan, quickly stir-fry the ingredients in the order specified, one at a time. Then once the garlic is cooked, toss in EVERYTHING.  Add a little bit of soysauce to taste, some chili, to taste as well. And water. Dilute a bit of corstarch with water or stock and thicken as needed. Once the consistency is perfect, serve 🙂
