Chicken in Lima Beans

I love lima beans. Locally known as patani, this is only available in wet markets. I have yet to see them sold in supermarkets, which is rather inconvenient, as I love having this. They are tender and yummy. And once overcooked, tastes like a lighter flavored green pea.

I decided to do this recipe here after specifically searching for chicken and lima beans recipe on the net. But of course, I didn’t have the 4 to 6 hour time frame and changed it up a lot. 😛 Well, just the hours actually. I ended up for boiling, simmering, stewing it for a good 45 minutes only. The lima beans got crushed and mashed in the process and I was left with mush for some parts. But the flavor is simple and great. I would love to do this again. Yum!

Chicken in Lima Beans Recipe

3 to 4 pounds chicken pieces
salt and pepper
1 tablespoon vegetable oil
2 large potatoes, cut in 1-inch cubes
1 package frozen lima beans, thawed
1 cup chicken broth
1/4 teaspoon dried leaf thyme, crumbled

Season chicken with salt and pepper. Heat oil and butter in large skillet; fry chicken until browned on both sides. Place chicken in crockpot with remaining ingredients. Cover and cook on low for 4 to 6 hours, until chicken is tender. 

Serves 4.
