Seared Salmon Belly

Salmon has always been one of my favorite fish and salmon belly has always been a cheap resort to the actual meat. Sold cheaply because it is refuse from restaurants selling or serving only the meat like for sashimi or sushi. Honestly, I like this fatty part of the fish. It is so good! But can be overwhelming at times.

I marinated this in calamansi, and seasoned this with salt, pepper, and some chili. On a hot cast iron pan, this was seared in hot oil, flipped over and seared. The skin ended up crunchy, the fat seared off. It was yummy such an easy dish, but really easy to be overwhelmed with. But yum 🙂
