How appropriate that this post landed today, on Chinese New Year! 🙂 I have actually cooked this last week but have been quite busy, being on a business trip most of the week and ending up too tired to really to type on my phone or even go to the business center of the hotel. But you shall know what I have been up to lately. 🙂

Chinese New Year is widely celebrated in Mania simply because of the numerous Chinese in the country. And us Filipinos, who have been repeatedly ambushed with different celebrations of all religions and races, tend to embrace foreign culture. You would be surprised that along with Chinese New Year, we celebrate Catholic Christmas, Muslim Ramadan (the start and end of it), and have special celebrations as well for July 4th. Yeah, Yeah, we have a lot of things going on. 🙂

It was one morning that my ate was hatching up some food ideas to serve Kuya Dino and she ended up with Yang Chow Fried Rice. “Authentic” was her word, but after volunteering to cook it, I then realized it was hardly authentic, with spam and corn entering the picture. 🙂

It was yummy, and hardly yellow like the ones served in the restaurants. But true to Chinese nature of cooking, it was mostly stir-frying. 🙂


Yang Chow Fried Rice Recipe

2 cups cooked white rice
1 beaten egg
1/2 of an onion, minced
2 to 3 heaping tablespoons of corn kernel (canned)
4 tablespoons of diced chorizo
4 tablespoons of diced spam
oil for stir frying

Individually stir-fry all of the veggies and meat until done, and season individually as needed. As the last step, stir-fry the rice, and then cover with the egg, still continuously mixing. Then add everything to the pan, keeping the fire high. Taste. Adjust seasoning, serve. 🙂
