I haven’t made pasta in a while, to think that there was a point I was running out of ideas for pasta. Well, I actually never do, cuz I never follow a recipe for any pasta recipe i make. Like this one.
I still had some frozen shrimp in the freezer and decided to use that. Along with some pasta (whatever is there, this time it is fettuccine), and whatever tomatoes we have (last resort is fresh tomatoes simply because of the length it takes to prepare them). We have some canned tomatoes, and that’s what we used.
I first lightly cooked the shrimp (maybe like defrosting them) seasoned with a bit of salt. I then cooked the onion, garlic, and tomatoes until they tasted cooked (trust me, they usually taste raw until cooked for maybe 30 minutes) and added some dried basil, fresh oregano and salt. This cooked for a good 20 minutes before I tried it, and added some sugar, more salt, and the shrimp and its juices.
Simmer simmer simmer. I added some chili flakes to kick up the flavor. Then afterwards, tossed this with the pasta along with some cheese to make it creamier and cheesier. Serve 🙂
Shrimp with Fettuccine in Crushed Tomato Sauce Recipe
1 cup cooked frozen shrimp, thawed
1 big onion, minced
5 cloves garlic, minced
chili flakes, to taste
1 big can of crushed tomato (you can also use diced or whole or fresh, whatever you have on hand)
cooked pasta, in this case, fettuccine
Quickly saute the frozen shrimp and season with some salt. Set aside, including the liquid from the shrimp, if any. Saute the onion and garlic, along with the chili flakes for a few minutes. Add the tomatoes and herbs, and season lightly (you can always adjust later) and let it cook for 20 minutes by simmering. Taste. Adjust seasoning as needed. I found it too sour and added sugar and added salt and pepper as well. Toss with some pasta and top with cheese.
