I had cooked frozen shrimp in the freezer and recently bought some diced tomatoes. I knew I was going to make pasta. i was just trying to figure out what else to add when I spied some expiring cheese dips in the fridge. I decided to add this to the sauce to serve as the “cream” part in the sauce.
It added a strong cheese dip flavor. Which I really didn’t like, but you know, it was still good. It kind of dwarfed the tomato flavor in the dip, which I generally love. The tomato flavor, not the dwarfing. But still, the pasta turned out yummy!
I added some topping of herbs, garlic, etc. bought by Sushee when she went to Europe a year ago. I forgot it had salt, and it ended up making the pasta a bit salty for those that were touched by the topping. But with a little mixing, it was all good. 🙂

Shrimp and Cheesy Tomato Recipe
1 onion, diced
5 cloves of garlic, minced
250g of cooked shrimp
1 can of tomatoes
couple of tablespoons of cheese dip (or about 1/2 cup of grated cheese)
Saute the onion, and garlic. Once softened, add the tomatoes. Season with oregano and basil. Allow to tenderize and become a bit of mush. Add the shrimp. Allow time the flavors to mix together. Lastly, add the cheese. Taste. Toss with the noodles.
