Sweet Potato Mash with Coconut

I usually recreate at home things I ended up liking whenever I eat out. There are tons of exception s of course, like when the ingredient is too expensive to experiment on, or I cannot get ahold of the ingredients. But other than that, flavors, recipes, and ingredients all at hand, I can recreate most of the stuff I eat. Of course, quality differs, and it’s not always 100%, but its usually good enough to earn praises 🙂 And who doesn’t like that?

So this one was eas enough. We had this in Ka Lui in Puerto Princesa. I can recall how it tasted like and it involved very super easy ingredients.  I had some coconut grated in the supermarket.  I had some freshly bought orange sweet potato steamed and mash without the skin.  I tasted the mashed sweet potatoes, added a little of milk, just to bind everything together, and a pinch of salt, and a big pinch of sugar.


Do the different color of sweet potato afffect its taste? Yes. I dislike the white and pale yellow ones for eating, but it can be mixed with other vegetables for cooking like the pinakbet. I love the purple ones and the orange ones, cuz they are the sweetest 🙂

I also had some avocadoes. I faked a guacamole by dicing this, adding some chili, then mixing in in some  sesame seed dressing (I didn’t have any sour cream on hand). And now for assembly.

Dump sweet potato, sprinkle with coconut, and serve with the guacamole on the side! 🙂
