I never though of making meat as a salad. I mean, call it an appetizer. But a salad? Salad screams of greens, except for dessert salads like the local buko pandan salad, or fruit salad, or buko salad. Okay, so that was a lot of exceptions. But meat salad? Well, it a gift and I will end up using it for sure. 🙂
It was a Thai salad kit, which said Larb in front. Apparently, that was what you call a Thai meat salad. So with 5 packets in kit, and some ground pork (I didn’t have ground chicken, and not in the mood to mince chicken), I went ahead.
Of course, explaining the instructions here is a bit weird considering that it is in the packet, anyway. But mix sachet 1, 3 oz water. Remove 3 out of the 5 chilis. Add chicken. Cook. Turn off heat. Add sachets 2, 3, and 4. They were coconut, lime powder, and chili powder. I used maybe 1/3 of the chili powder. Then add the ground roasted rice, which was sachet 5.
I would guess that wrapping this in lettuce leaves would be a hit! But I didn’t have any,and on its own, it was actually damn good. Throw in more veggies and it would be a complete meal! 🙂
