I am a fan of garlic. I love everything garlic, and find Krazy Garlik too weak for me. But oooo, garlic, in its many forms (just not raw) is yummy. And one of my favorites is roasted garlic. It is sweet, and it adds a depth to a lot of dishes.
I made this when I made my bacon. And I decided to add this to some mashed potatoes. The result? Slightly tinged with sweet garlic. Then topped off with fried pork skin (a refuse from the bacon). That is simplicity at its best, but yummy.
Roasted Garlic Mashed Potato Recipe
3 heads of garlic, with tops slightly cut
Roast the garlic in the oven, wrapped in foil, drizzled with oil, and sprinkled with salt. Just throw it in alongside a baking moment, maybe not with desserts. 😛 Set aside. Squish and mash. Yummy as is on bread 🙂
Roasted garlic, about 1 head
3 large potatoes
fried pork rind
Boil the potatoes until fork tender. Strain, add the butter, and season with salt. Throw in the garlic as well. Mash to your preference, mine is a bit lump-free this time. Then in a bowl, top with the pork rind, or scallions, or sour cream, or cheese, or whatever you fancy 🙂
