Filipino Carbonara


I have to give a warning. This is not the carbonara you wo uld know if you are Italian. Nor would it be anything that resembles anything that comes from a real Italian restaurant. Simply enough, it’s the Filipino version of the carbonara. It’s not sweet, but it’s creamy as hell. It’s almost like the fake Pasta Alfredo (supposedly, the real one just uses butter and cheese, no cream at all). The Pasta Alfredo locally is more or less the same as the carbonara.

Carbonara used to known as the poor man’s dish.  It was just bacon, cheese and egg thrown in some cooked pasta. Though that is much simpler, this recipe is easy too. I got this recipe from Andre, a friend of mine from high school.

I cooked down some bacon until it was almost crispy. I pulled it out from the oil (and started eating it as soon as it was cool to touch). I added a bit of butter, about two tablespoons, then the garlic. Cook it until it’s cooked, but not fried. Add the mushrooms and the cream. Season with salt. Add the cheese. Remember that this is a sauce and should be a tad saltier than usual. The noodles will dilute the salty flavor of the sauce. 🙂 Serve 😀

Carbonara Recipe

1/2 kilo bacon, cut into thin slices
1 can sliced mushroom
3 cans cream
1 head garlic, minced
Cheese, whatever you have on hand

Render fat from the bacon. Fry it until it is crispy. Pull out from the pan. Evaluate the oil. Depedning on how fatty your bacon is, you might have to add butter or remove some oil. Add the garlic and fry lightly until the aroma comes out. Add the mushroom and the cream.Add the cheese.  Season with salt. It will be thick, but you can add some milk to loosen it.  Serve with cooked noodles 🙂
