Hainanese Turned White Chicken
Surely, for readers out there, the feature of Hainanese chicken isn’t new. So what’s new with this one? The sauce. Mom was begging for the white chicken that she knows, with the familiar soy ginger sauce. After having the internet provide me with the recipe, I discover that it is almost like the Hainanese, with minor differences in flavoring for the stock like cilantro. But hardly different.
The sauce though, almost same in flavor, but totally looking different. Instead of simply adding some oil, salt and sesame oil to the ginger, this required soy sauce, sugar and some of the stock J It turned out a bit saltier than I wanted. But it was still okay, you just add a bit more stock
Scallions appear in both, and that’s all good
So yup, we had Hainanese and White Chicken in one meal

Oh yum, I love this type of chicken! And the ginger scallion sauce is the best part!
I end up eating the rice and sauce whenever I make it, even if I’m pescatarian! I know it’s already full of chicken goodness, but I can’t help myself.
This made me miss the white chicken at the former San Jacinto Resto in Delta. So simple and so good.

But the taste is so simple and clean. It becomes an instant comfort food
